Mini Cheesecakes!

More party prep...

After I got a lot of paper decorations and the mini blondie bites made,
I was on a quest to find more cute, little, easy desserts and then I thought - cheesecakes!

I did not have time to master a new recipe, so I went with the Jell-o Cheesecake mix. I debated upon putting them into cupcake liners, but while I was shopping at Super Wal-mart, I stumbled upon these cute little containers with lids! For about $3.00, I got 50 of them, super affordable and too cute not to pass up!
I tinkered with the amount of mini-cheesecakes I could get out of one box mix. I was looking for a good ratio of graham cracker crust to cheesecake. I started with 30 containers, but I ran out of cheesecake and the crust was too thin. So, I made up a second box and split it between 20 containers and that worked perfectly! And this little tamper from Pampered Chef worked great to tamp down the crumbs.
 I wasn't sure how well, the cheesecake in a piping bag would work, but it worked like a charm!

And here they are, all done! Cute little lids and all! Perfect for stacking and storing in the freezer, yep the freezer. It says right on the box that they freeze well. In fact, I still I have a few left in my freezer and it's true - a cheesecake a day, keeps the skinny jeans away! :)
